Sunday Supper- 90’s Dinner Upgrade

Growing up we ate a lot of chicken. Like a lot. My brother wouldn’t eat any other protien. So, many of the meals my mom made were chicken based. We still had shepherd’s pie, meatloaf, pork chops, homemade mac and cheese but there was alot of chicken consumption. She’d even make him his own chicken dish if we were eating something else!(spoiled much?) Shake ‘n Bake was almost always in the cabinet, it was so simple and easy to throw a meal together after a long day at work.

I would crave the comfort of Shake ‘n Bake every once in a while and bring a box home from a shopping trip. Cook up some rice and a vegetable, voila a dinner that I didn’t really need to think about! A few years ago I stumbled across a recipe for Parmesan Crusted Chicken. I clicked on it because I reminded me a bit of that childhood chicken. Is it just like Shake ‘n Bake? No. Is it delicious and crunchy? Yes! So throw on some flannel, play that mix with R.E.M., Oasis, Nirvana and TLC and have a simple 90s meal. Oh man you should hear some of my old mixtapes and cds…they are ALL over the place! Sitting by the radio waiting for Two Princes to come on so I could add it to my mix…hahaha I’m old.

This recipe contains mayonnaise which I generally do not like but it works in this meal. If I didn’t know it was in the dish I would have no idea from the taste. Serve with a green veggie of choice, we love broccolli, green beans or a nice salad. Whip up a box of rice pilaf and you have a whole meal in under 30 minutes! Did anyone else think the Near East rice brand was so fancy when they were little? Just me? That’s ok, it was fancy. Maybe I’ll do a date night in 90s theme, that could be fun!

Parmesan Crusted Chicken

Recipe from Hellmann’s

Ingredients:

  • 1/2 cup mayonnaise (the real stuff )
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken breast halves
  • 4 tsp. Italian seasoned dry bread crumbs

Directions:

  1. Preheat your oven to 425F
  2. Combine the mayonnaise with cheese in medium bowl.
  3. Arrange chicken on baking sheet. I line mine with parchment for easy cleanup! Lightly salt and pepper.
  4. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
  5. Bake until chicken is thoroughly cooked, about 20-30 minutes depending on the thickness of the chicken.
