Happy Friday! And what a wonderful Friday it is! At 2:10 this afternoon I am officially on Spring Break. That means I do not have to think about school or my students for a whole week! I have a book I’ve been wanting to read, some activities to sneak in and maybe some closet cleaning. But absolutely nothing school related! This week’s finds include a Passover recipe, passport info, a new type of coffee, and a New England podcast.
Savory Matzo Brei
I’m always up for trying something new and although I don’t celebrate Passover this recipe looks delicious! I also learned something new reading this recipe. (which I feel silly admisting) I never realized that the Matzo crackers that I see in stores are often softened or ground up to make foods like Matzo Ball Soup and this Matzo Brei. (duh, Jess)It makes perfect sense but in my mind they were just eaten as crackers. I learn something new every day, even if it’s obvious to others! This dish can be served savory or sweet, yum!
Passport Renewals
People want to get away more than ever. And with more opportunities for international travel you may find this article from Conde Nast helpful. I love true crime and listening to podcasts on my commute home. I’ve been listening to Dark Downeast for almost a year now and it’s so good. Kylie Low does such an amazing job researching and conducting her interviews. I also love that the episodes are based in my home state of Maine and throughout New England. New episodes come out each Monday!
