Friday Finds February 25

Happy last week Friday of February! I’ve been home on “vacation” this week and even though I didn’t go anywhere I’ve had a pretty nice week at home. This week’s finds include a yummy salmon topper, a trip to the museum, a fun website and a movie night recommendation.

Warm Olive and Caper Vinaigrette

I made a really yummy salmon dish on Sunday. I made my usually sous vide salmon with lemon and dill but I added a vinaigrette that I saw from Milk Street. I’m telling you, if you don’t subscribe to this magazine/website you are missing out (thanks Meghan!) The vinaigrette upped my salmon game and I highly recommend it. Ingredients: juice and zest from half a lemon, 1 cup pimento stuffed green olives (chopped), 1/4 cup drained capers (chopped), 1/4 cup olive oil, and 1/4 teaspoon red pepper flakes. Directions: In a small saucepan over medium heat combine all ingredients except the juice and zest. Cook for about 2 minutes, it will start to sizzle a little. Add lemon juice and cook, stirring until warm. Mix in zest, cover and set aside until using. This makes enough for 4 salmon filets. SO good!

The Portland Museum of Art

The PMA opened its doors back up after a 6 week break and I was able to visit on Wednesday. The current exhibitions are called “North Atlantic Triennial” and “Interaction of Color.” ⁠The pieces were really interesting and if you are in the Portland, Maine area I highly recommend a visit.

Always Fits

I just got done filling my cart with Punky Brewster stickers, Super Mario fridge magnets and bunch of nostalgic greeting cards. This website has the quirkiest gifts and I love the 80s & 90s page. If you’re looking for some Shady Pines socks or a mid century retro designs coloring book you need to check this site out. Oh and the Care Bears puzzle, I think I’ll add to cart too.

Who You Gonna Call?

Ghostbusters! Speaking of nostalgia…we watched Ghostbusters: Afterlife this week and absolutely loved it. I felt like we were watching an old school 80s movie about a group of funny and quite capable kids who end up saving the world. If you’re a fan of the classic Ghostbuster movies you should give it a watch, you won’t be sorry. Also, did you know that Janine from Ghostbusters (Annie Potts) is also Sheldon’s Meemaw on Young Sheldon? My mind was blown.
