Overnight Oats

One of my goals for this school year was to be more organized at both home and work, I thought an easy way to hop on the organized train would be to prep lunches breakfast for the week on Sunday #mealprepsunday!  I was good about cutting veggies and pairing them with small containers of humus, making a big batch of soup or salade niçoise for lunches, and even making super delicious breakfast sandwiches that can be thrown in the freezer and reheated in just a few minutes. But you know what? This lasted just a few weeks. It took A LOT of time, I’m talking hours of prep on my Sunday Funday so I have abandoned my meal prep Sunday except for overnight oats.

 You throw some old-fashioned oats in a container with some milk and ta da breakfast in the morning. This is my kind of meal prep. The flavor possibilities are endless, but this time of year I really like pumpkin oats. They are delicious hot or cold, super simple to make and will keep you full until lunch.

 

Pumpkin Pie Overnight Oats

·        2 Tablespoons Pumpkin Puree

·        ¾ cup Old-Fashioned Oats

·        ¼ cup Almond Milk or milk of your choice

·        ½ teaspoon Pumpkin Pie Spice

·        Dash of Cinnamon

·        Pinch of Salt

·        1 teaspoon Maple Syrup or Honey

·        ½ teaspoon Vanilla Extract

 

In a small bowl or container that has a lid, mix all ingredients. Cover and refrigerate overnight (or for at least an hour so the oats soften and absorb the liquid).

Top with a drizzle of syrup/honey or chopped pecans for crunch if desired, it’s wicked good with or without.

Enjoy cold, or microwave for 30-60 seconds to enjoy warm 😊
