Well, you would never know that Spring is a week away if you looked out the window! It’s officially blizzard conditions out there so I am hunkered down with some good beer and homemade banana bread. Anyone that knows me, knows that I LOVE to bake. My husband is definitely the home chef but he’s got nothing on my whoopie pies! That’s one of the reasons why I am starting this blog, to share some of my favorite recipes with friends and family.
- 1/4 Cup Butter (1/2 stick)
- 1 Cup Sugar
- 1 Egg
- 1/2 Cup Buttermilk
- 1 teaspoon Vanilla
- 1/2 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 1/2 Cups All Purpose Flour
- 3 Mashed bananas
Pre heat oven to 350 and prepare loaf pan. I like to use parchment paper but butter/cooking spray with a touch of flour will do the trick.
With a hand held or stand up mixer cream butter until nice and smooth. Add sugar, eggs, buttermilk, vanilla and mix until combined. In a separate bowl mix dry ingredients. Mix bananas into your wet mixture. Slowly add in your dry ingredients until well combined. (you can also add berries, chocolate chips, nuts at this time if you want to jazz it up)
Bake for 45 minutes – 1 hour, or until a toothpick inserted in the middle comes out clean. Let cool on a wire rack and enjoy! Super yummy with peanut butter.
